MAINTENANCE INSTRUCTIONS These service procedures are for the use of qualified service personnel only Service by other than qualified personnel may result in damage to the oven and or injury to the operator Qualified service personnel are those individuals firms companies or corporations which either in person or through an agent are engaged in and responsible for repair or servicing of commercial food preparation equipment who are experienced in such work familiar with all precautions required and have complied with all requirements of state and local authorities having jurisdiction If you should require assistance in the selection of a qualified service agency please contact Duke Manufacturing Co s Service Department at 800 735 3853 ext 5 DOOR ADJUSTMENT 6 13 Series Turnbuckle Adjustment CAUTION The door Turnbuckles and door Switch located a heated zone 4 Care should be taken to avoid burns All 6 13 Series Convection Ovens except model option Q have doors that are interconnected so they operate simultaneously by means ofa Drive Chain and Turnbuckle Aassembly The doors are properly adjusted and inspected before the oven leaves the factory However from time to time it may become necessary to readjust the doors after usage If you find it necessary to adjust the doors for proper operation the Drive Chain and Turnbuckle Assembly is located behind the Top Finish Piece above the door

ECT OVEN FROM POWER SOURCE BEFORE PERFORMING ANY SERVICE 1 Open the Oven Doors fully 2 Remove the Lower Finish Piece by loosening the four screws located inside the Oven Door opening 3 Disconnect wire from the door Switch and connect an ohmmeter across door switch contacts 4 Check that with Oven Door open there is no continuity 5 Close door until a click is heard and check Switch contacts for continuity Ohmmeter should indicate 0 Ohms THERMOSTAT CALIBRATION NOTE Thermostat calibration is applicable only for the V Controller It is not applicable to ovens with solid state controls Check Calibration 1 Turn the oven on by turning the POWER Switch to the COOK position 2 Open Oven Doors and place a pyrometer in the center of the middle oven rack Areliable mercury type thermometer can be substituted ifa pyrometer is not available 3 Turn the Thermostat dial to 350 F 177 C Allow the oven to preheat 1 2 hour When the indicator light goes out the Thermostathas been satisfied Check the pyrometer or thermometer to determine the internal oven temperature If the reading on the pyrometer or thermometer is less than 10 F different from the Thermostat setting no adjustment is needed If this reading is more than 10 F different proceed with calibration procedure Calibrate Thermostat 1 Remove Thermostat Knob by loosening the set screw and pull the Knob forward Take

ED FOR LEAKS CHECK WITH A SOAP AND WATER SOLUTION BUBBLES DO NOT Tine CAUTION When reconnecting any gas connection use pipe joint compound USE AN OPEN FLAME SHUT OFF THE GAS BEFORE 8 Connect oven to power source SERVICING THE UNIT 9 Turn main gas line on 10 Turn oven on and check for proper operation GAS SOLENOID The gas solenoid is located behind the control panel and attached to the Control Compartment bottom WARNING DISCONNECT OVEN FROM POWER SOURCE BEFORE PERFORMING ANY SERVICE Removal 1 Turn Gas Valve on front control panel to the OFF position 2 Perform Component Access procedure 3 Verify that incoming gas line has been turned off 4 Disconnect incoming gas line from back of Gas Shutoff Valve 5 Remove shaft from front of Gas Shutoff Valve 6 Unscrew Gas Shutoff Valve from top of Gas Valve and remove Gas Shutoff Valve 7 Reverse procedure to install Gas Shutoff Valve 1 Perform Component Access procedure Service Manual for 6 13 and Series Gas Convection Ovens CAUTION When reconnecting any gas 2 Disconnect wires from Gas Solenoid connection use pipe joint compound 3 Gas Solenoids will require the entire gas manifold being removed as necessary to replace either the single or dual solenoids WARNING 4 Reverse procedure to install new Gas Solenoid ALL GAS JO

T REMOVAL AND REPLACEMENT 3 Pull the Control Panel forward and lay aside Do not remove any wiring 4 Remove the Lower Finish Piece Combustion Compartment Cover by removing the screws located in the bottom of the door opening 5 Find the pressure tap located at the lower right hand corner of the oven on the right hand side of a plumbing Tee The pressure tap is a 1 8 pipe plug with a hex head 6 Remove the pressure tap plug and replace with the fitting for a gas pressure meter slack tube or manometer 7 Attach the meter 8 The pressure regulator is an integral part of the dual solenoid gas valve Locate the adjustment screw on the left hand side It has a slotted aluminum cover cap 9 Remove the cover cap 10 Open the Gas Shutoff Valve 11 Turn the POWER Switch to the COOK position Service Manual for 6 13 and E Series Gas Convection Ovens 12 Withthe burners on check your meter The manifold pressure should be 3 5 W C for natural gas and 10 W C for propane 13 Check the rating plate to verify gas types and pressures NOTE It is important to check the gas pressure of any unit while ALL the equipment on that gas line is ON This will tell you if you have a properly sized gas delivery system or if there is a problem with gas volume If you experience a pressure drop that does not recover when the other equipment is turned on you should look for problems in the size of the pipes or some other

32. ppliance Before performing any maintenance or service that requires exposure to electrical components follow these steps 1 In electrical box place appliance circuit breaker into OFF position Place a lock or other device on electrical box cover to prevent someone from placing circuit breaker ON Place a tag on electrical box cover to indicate that appliance has been disconnected for service and power should not be restored until tag is removed by maintenance personnel Disconnect appliance power cord from electrical outlet Place a tag on the cord to indicate that unit has been disconnected for service and power should not be restored until tag is removed by maintenance personnel RIGHT SIDE PANEL 1 2 Remove screw at the top of the Control Panel Loosen set screw and remove GAS SHUTOFF Knob Slide the control panel forward being careful not to damage wiring or thermocouple or RTD tubes Loosen the four screws that hold the Lower Trim Piece in place Slide the Lower Trim Piece forward and remove it Before the large side panel can be removed the stainless steel insert panel behind the control compartment must first be removed Remove two screws that hold the small stainless steel insert panel in place Slide the panel forward and out of the unit To remove the large side panel remove the six screws on the front and rear flanges of the panel Pull panel free from the bott
33. s It is best to adjust Turnbuckles while the door is in an unlatched position 1 Open Oven Doors 2 Remove the Top Finish Piece above the Oven Door by removing the screws securing the Top Finish Piece ee Finish Piece Jam Nuts Turnbuckle Assembly 3 Loosen the jam nuts on both Turnbuckles 4 Make adjustments simultaneously to both Turnmbuckles Loosen one Turnbuckle and tighten the other Service Manual for 6 13 and Series Gas Convection Ovens 5 Once the Oven Doors are operating properly retighten the jam nuts so the Oven Doors will stay inadjustment Test the Oven Doors to make certain the adjustment is corrrect 6 Install top finish piece over the door Door Switch Adjustment The door Switch is located behind the lower cover on the right side The door Switch is activated by a Cam which is mounted to the door s hinge pin with a set screw 1 Open the Oven Doors fully 2 Remove the Lower Finish Piece by loosening the four screws located inside door opening 3 Position the Oven Doors so they are nearly closed but not latched 4 Toadjust the Cam loosen the set screw and rotate the Cam until you hear the Switch click 5 Tighten the set screw in the Cam Test the Oven Door to make certain the Switch will make contact with the doors closed 6 Replace the Lower Finish Piece Door Switch 20 DOOR SWITCH CHECK DISCONN
