2. licam For information or service contact the Bevl es Company at 214 421 366 or toll free 800 441 1601 If replacement parts are ever required only use parts that have been approved by the manufacturer When contacting the manufacturer always have the model number and serial number of your proofer hot cabinet This information is located on the product identification plate at the right end of the humidity heating module TO REPLACE THE THERMOSTAT ON THE PROOFER HOT CABINET MODELS PHC70 MP17 AND PHC70 MP17INS Remove the two black knurled knobs one located at each side of the control panel Pull the humidity heating module out from the cabinet Refer to drawings below for steps 3 4 and 5 Remove the screws from the bottom of the module 6 screws on each side total of 12 Remove screws fromthe back side of the control panel 2 screws per side total of 4 Remove screws fromthe top edge of the control panel 3 screws total Using a 5 64 Allen Wrench remove the thermostat knob Remove disconnect thermostat bulb from inside the module against the side wall Unscrew and remove the thermostat Gad After installing new thermostat reverse the above steps Make certain that the one inch air flow opening at the back of the humidity heating module is up behind the cabinet s back vent hanging on the rear wall Refer to operation instructions and the wiring diagram for additional information BOTTOM

Inspect water level in the water pan 2 Check the setting on the infinite switch white knob to see if itis set at a normal operating level Check to see if the cabinet 15 completely closed 4 Make certain that the humidity heating module s one inch air flow opening at rear of module is behind the cabinet back vent that hangs on the rear wall of the cabinet H3 Make certain that the Lexan R water Pan Cover is correctly positioned over the entire water pan and the louvers located in front of the water pan 6 Make certain the fan blower is running Contact the manufacturer for assistance EXCESSIVE HEAT If your proofer hot cabinet temperature is higher than normal 1 Check the setting on the thermostat knob to see if itis set at a normal operating level 2 Check the ambient room temperature to see if it 15 greater than your desired temperature when proofing de Contact the manufacturerfor assistance NOHEAT lf your proofer hot cabinet is producing no heat or considerably less than normally achieved 1 Check the setting on the thermostat knob to see if itis set at a normal operating level 2 Check to see ifthe cabinet door s is completely closed gt d Make certain that humidity heating module s one inch air flow opening at rear of module is behind the cabinet back vent that hangs on the rear wall of the cabinet Make certain thatthe fan blower 15 running Contact the manufacturerfor assistance

16. peration MAINTENANCE CLEANING This cabinet was designed and built for maximum sanitation It is not self cleaning so it should be cleaned frequently with soap and water NEVERUSESTEELWOOL OR CAUSTIC CLEANING COMPOUNDS Make sure that the unit is turned OFF and unplugged from the electrical service Remove the Lexan R water pan cover Remove the pan supports and vertical standards Remove the vent from the rear wall Clean inside of cabinet with soap and water Clean clear Lexan R water pan cover and Lexan R cabinet door s with soft sponge soap and water NEVER HARSH MATERIAL OR ABRASIVES FOR CLEANING LEXAN Rithereby avoiding scratching f Remove and clean 18 x 26 drip pan If desired the humidity heating module can be removed by loosening the two 2 black knurled knobs located at each side on the module on the exterior of the cabinet The module can be pulled out of cabinet for additional cleaning We Suggest that you clean the water pan at least once a month with a solution of 4 white vinegar and hot water Allow white vinegar to remain in the water pan overnight Then use a soft cloth to wipe away any mineral buildup IMPORTANT When placing the humidity heating module back in the cabinet be sure to place the one inch air flow opening behind the cabinet back vent that hangs on the rear wall This is necessary to maintain uniform temperature and humidity distribution SERVICE Phone th
17. the temperature as needed to best suit your product 5 Set humidity control white knob to the 3 position This can then be adjusted if necessary to suit your specific product 6 Make certain that a standard 18 x 26 has been inserted as pan the runners on the bottom outside of the cabinet f Push the power switch to the ON position ALWAYS tum the unit ON or OFF with this control HOLDING 1 Remove Lexan E water pan cover 2 Fill water pan to 3 4 full if cabinet is cold hot tap water is recommended 3 You may operate the cabinet with or without the Lexan R water pan cover 4 Set the thermostat black knob to a minimum of 145 You must hold food above 140 F to ass st in preventing the growth of harmful bacteria Most foods are held at 160 F 5 Set the humidity control white knob position to 4 This can then be increased if necessary to suit your specific product Make certain that a standard 18 x 26 pan has been inserted as drip pan in the runners on the bottom outside of the cabinet f Push the power switch to the ON position Always turn the unit ON or OFF with this control NOTE It is recommended that humidity be kept to the minimum level that is practical for your product Excessive humidity with condensation on the walls and or floor of the cabinet is not considered desirable You should attempt to maintain the water pan atthe level of 1 2 full to 3 4 full during o
