21. 104 Yonago Med Ass 59 104 112 2008 Salt intake and related factors in healthy adults first report Yukiko HARAGUCHI Haruyo MATSUURA Noriko YAKURA Department of Nursing Care Environment and Mental Health School of Health Sciences Faculty of Medicine Tottori University ABSTRACT The purpose of this study was to investigate the association among salt intake taste sensitivity salt preference eating habit and blood pressure The study subjects were 38 men and 24 women who worked in an office or in a hospital of a local government Daily salt intake was measured using a simple self monitoring device once a week at their home to collect their morn ing urine Taste sensitivities were investigated on the basis of subjects recognition thresholds of the four basic tastes sweet salty sour and bitter Salt preference was investigated using miso soup with four different salinity concentrations 0 3 0 6 0 9 1 2 Eating habits were surveyed using a seven item questionnaire Salt intake in men was found to be significantly high er than in women The taste sensitivities of two basic tastes salty sour were significantly lower in men than in women A salt preferen
